Subject Overview

 

We offer a wide range of programmes across both Hospitality and Catering starting at level 1 up to level 3. You can study with us full or part time or brush up your skills with one of our short courses which are available throughout the year.

Our kitchens are fully equipped to offer you a range of first class learning experiences which include Food Preparation and Cookery, Patisserie and Confectionary and Food and Drink Service. All of our staff are highly experienced to provide you with a wealth of knowledge and skills that will set you up for a career in the hospitality industry.

The Catering Department has always been very successful, with students gaining employment in some of the top hotels both nationally and internationally such as The Waterside London, The Fat Duck in Bray and the world famous 3 Michelin-starred NOMA in Copenhagen.

    Professional Cookery Level 3

    What do you enjoy about your course?
    I enjoy learning new cooking skills and the ability to make a variety of different dishes. I have also had the opportunity to enter the Inter College Cookery competition April 2014 and was delighted to be awarded the runner up prize.

    What attracted you to Darlington College?
    I was attracted by the good reputation of the catering department at the college.

    What are your career aspirations?
    I hope to become a top chef and eventually own my own restaurant.

    What is the next step in your education?
    I am currently studying Professional Cookery Level 3.

    How will this course prepare you for your next step?
    I've learnt a lot of new cookery skills which will assist me in my next course and I've learnt to become more adaptable.

    What advice would you give to other students?
    You need to be prepared to work hard to gain your qualifications.

    What do you enjoy about your course?
    I have enjoyed cooking every day and being so hands on.

    What attracted you to Darlington College?
    Being able to do such a practical course.

    What are your career aspirations?
    I hope to open up my own restaurant and try to gain a Michelin star for my establishment.

    What is the next step in your career?
    I am now working at Brasserie Zedel in London. I want to carry on working as a full time chef and progress and gain experience in various types of restaurants.

    How has this course prepared you for your next step?
    It has given me a good grounding in the basics of cooking and has given me a passion to learn more.

    What advice would you give to other students wanting to study at the college?
    To keep focused on your studies and have a vision of what you want to do after college.

    What do you enjoy about your course?

    being able to prepare and cooking creative dishes, while learning about culinary arts in all areas.

    What attracted you to Darlington College?
    I was interested in all aspects of cooking.

    What are your career aspirations?
    I would like to be come a Head Chef in a top London hotel.

    What is the next step in your education?
    I am progressing on to the Foundation Degree in Culinary Arts.

    How will this course prepare you for your next step?
    It helped to prepare me deal with pressure of working in a kitchen as well as being involved in lots of practical aspects of cooking.

    What advice would you give to other students?
    To achieve in this area, it is useful working part time in the industry whilst learning at college.
